Gourmet Jello Shots

I wanted to make something fun but fancy for New Year's Eve this year so I attempted Champagne/Vodka Jello Shots. My inspiration came from this image via Pinterest:


I decided to stick with what I already knew (Vodka Jello Shots) and mix the idea with a Champagne Jello Shot. Starting with some cheap vodka and raspberry jello, I created the first layer. 



To make the Raspberry Vodka Jello Shot layer you will need:

6 oz. package of raspberry jello
2 cups of vodka (any kind works)
2 cups boiling water
Mix together the jello mix and boiling water first until it dissolves then add the vodka. Pour into a lightly greased casserole dish (or whatever container you'd like to use). Refrigerate for 2-4 hours.


To make the Champagne Jello Shot layer, you will need:

4 packets of Knox gelatin (1 box normally contains 4 packets)
1 cup of champagne (any kind works)
1 cup of boiling water

Mix together all 4 packets of gelatin with the boiling water, then mix in the champagne. Pour this mixture on top of the raspberry jello layer. Make sure not to pour in just one spot so the layer stays intact. Refrigerate another 2-4 hours or overnight.



Once the mixture is solid, cut into squares or any shape to serve. I decided to garnish my squares with raspberries and blackberries for a fancier look for New Year's Eve.  Mine don't exactly look like the picture above but they'll do!



Lots of different combinations that you could make for these...Serve and enjoy!!
